You can edit the Deployment YAML to run more replicas, or you can use the kubectl scale command. When you list Pods you can specify wide output, which includes useful additional details.
In the Portal you'll see the Application Gateway links a frontend setup to a backend setup. That's where you should see some familiar IP addresses.
